Schezwan Fried Rice Recipe

Schezwan fried rice is a flavorful and spicy dish that combines rice, vegetables, and the bold flavors of Schezwan sauce. 

Here's a delicious recipe for Schezwan fried rice:

Ingredients:

- 2 cups cooked rice (preferably cooled or leftover rice)
- 1 cup mixed vegetables (carrots, bell peppers, peas, corn, etc.), finely chopped
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons Schezwan sauce (adjust according to your spice preference)
- 1 tablespoon soy sauce
- 1 tablespoon tomato ketchup
- 1 teaspoon vinegar
- 2 tablespoons cooking oil
- Salt to taste

Optional: Spring onions, chopped for garnish

Instructions:

1. Heat oil in a large pan or wok over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant.

2. Add the chopped onions to the pan and stir-fry for 1-2 minutes until they turn translucent.

3. Add the mixed vegetables to the pan and stir-fry for 3-4 minutes until they are slightly cooked but still retain some crunch.

4. Push the vegetables to one side of the pan and add the cooked rice to the empty space. Break up any clumps of rice with a spatula and stir-fry for a minute to separate the grains.

5. Now, add the Schezwan sauce, soy sauce, tomato ketchup, vinegar, and salt to the pan. Mix everything together, ensuring that the rice and vegetables are coated well with the sauce. Stir-fry for another 2-3 minutes to heat everything through.

6. Taste the fried rice and adjust the seasoning or spiciness according to your preference. You can add more Schezwan sauce if you like it spicier or adjust the salt and soy sauce as needed.

7. Remove the Schezwan fried rice from heat and garnish with chopped spring onions if desired.

8. Serve the hot and spicy Schezwan fried rice as a standalone dish or as a side with your favorite Indo-Chinese dishes like Manchurian or chili chicken.
